The Tours violet celery comes to Piedmont from France and is tastier and more tender than the local ones. Over the years it has acclimatised very well in the vegetable gardens surrounding the city of Turin, particularly in Orbassano in the water-rich soils. It has developed the characteristic red colour of the base of the ribs and a slightly almondy flavour that makes it very interesting for use in cooking.
The red celery of Orbassano is harvested from late September to early November.
