Seirass del Fèn is a seasoned ricotta cheese typical of the Waldensian valleys, with a delicate and flavoursome taste, which has always belonged to the local cheese-making tradition.
Seirass is produced by heating the whey of cow's, sheep's and goat's milk, either pure or mixed, to which whole cow's, sheep's and/or goat's milk is added, obtained from the milking of animals reared at an altitude of over 600 metres.
Seirass can be enjoyed both at the table, e.g. as a special dessert accompanied by blueberry, elderberry or honey jams, and in the kitchen, e.g. as a filling or condiment for fresh pasta.
