Mustradela is a sausage made from poor and genuine ingredients, and is one of the typical products of Waldensian cuisine.
It is a tasty black pudding to be eaten fresh, cut into slices and accompanied by bread, or sautéed with onions, as the main ingredient of a very old Waldensian dish, or, after boiling, hot and accompanied by potatoes or polenta.
There are less than ten butcheries producing it and they are located in the Waldensian Valleys and in the Pinerolo area.
