It is a fresh cheese made from whole cow's milk, with a soft paste, very quickly consumed.
It has a cylindrical shape with flat faces and the weight varies from 120 to 130 g. Absent rind, the cheese is all edible; the use of cloth for draining gives the typical texture to the surface.
The paste is typical of this type of cheese and there is no distinction between the exterior and interior of the cheese, the colour is milky white and the texture is soft and moist.
The flavour is sweet and pleasant and is greater than that perceived when drinking a glass of milk.
