Located in the heart of Turin, Marchese is an Italian restaurant offering a locally inspired, seasonal menu with a delightful selection of meat, fish, and regional specialties.

The concept was born from the idea of creating a space that is both welcoming and elegant, where guests can enjoy traditional as well as innovative dishes while savoring good company and an extensive wine list from across Italy.

The cook

Born in Rome, Giovanni Giammarino honed his culinary craft under the guidance of Heinz Beck at La Pergola at the Rome Cavalieri. Following a series of distinguished experiences in Italy and abroad, he went on to lead the kitchens of acclaimed restaurants and luxury hotels and later joined Marchese to pursue a new and ambitious culinary vision.

At the core of his philosophy lies an uncompromising respect for the ingredient—never necessarily rare or luxurious, yet always exceptional—guided by strict seasonality. Each dish is conceived with clarity and restraint: a carefully balanced composition of no more than three or four elements, in the tradition of Robuchon and Marchesi, where complementary components—often a fruit and a vegetable—serve solely to elevate the main ingredient.

His cuisine is an exploration of textures, temperatures, and contemporary techniques, including low-temperature cooking, sous-vide, spherification, powdering, and indirect heat.

At Marchese, the ingredient remains the absolute focal point of every plate.
