A menu created to showcase a key ingredient in Alpine tradition: because in the Lanzo Valleys, cheese-making is art and tradition, culture and identity.
Modern and traditional recipes come together, leaving room for influences that take us on a journey from our valleys to the rest of Italy. The most iconic cheeses of these mountains, such as Toma and Blu di Lanzo, are a must, as is Chevrin, a product of excellence that tells a distant story of mountain pastures and mountain dwellers.
Menu:
Parmesan lollypops and sparkling wine;
cannoli with cheese and pepper cream, mocetta della Valle with flakes of Chevrin, Blu di Lanzo with red onion compote, multicoloured salad with edible flowers, pecorino flowers, caciotta al pepe cocotte and rosemary croutons;
Castellanzo risotto, gorgonzola and renette apples, polenta gnocchi with mascarpone and Toma di Lanzo cheese;
cubed beef fillet and Alesese fondue, Piedmontese beer bombette (pork bundles with beer toma cream and Bra sausage);
Greek yoghurt, hazelnut and honey semifreddo;
coffee, white and red wine.
