Agnolotti del Plin 

Egg pasta with filling which gets its name from the action of sealing in the filling by pinching (“plin” in Piemonte dialect) the pasta with thumb, middle and index fingers.

Plin are also called “ravioli”, a word that comes from the verb “raviolè” which has the twofold meaning of ‘rolling up’ and also to ‘reuse’ i.e. make use of leftovers for the filling.
