From the late 18th century, when French cuisine reigned supreme, to the First World War, the exhibition traces Italians’ dining habits: from cafés to restaurants, from taverns to local pubs, from Cavour to Pellegrino Artusi. Food as a key to understanding the society, economy and politics of a country in the making – even on the plate.
