In a rustic, intimate and beautifully maintained dining room, featuring a welcoming fireplace, we serve Piedmontese and Occitan specialities.
Among these is “calhietta”, a traditional dish from the valley whose recipe varies from village to village. “Calhiette alla moda del Laux” are made with raw grated mountain potatoes combined with sautéed leeks, diced salami and lard, flour and eggs to bind the ingredients together. They are shaped into potato-sized dumplings and cooked in seasoned water for at least an hour, then served with melted butter and Parmesan cheese.
At Lago del Laux, our guests will find only high-quality ingredients, skilfully prepared and, above all, made with love. Through our dishes, we want to share a little of the history and traditions of this area.

Chef Ronchail
Eighty years old and still eager to start over, take on new challenges and put himself to the test once again. Always looking for new inspiration, he has made his life a constant journey through different restaurants and professional experiences. He has even had a few spells in fine dining, but he has never lost the true passion of the tireless Pierluigi Ronchail: cooking.
It is not a full-time commitment, but during the Christmas holidays and at weekends, he can be found at the stove. His passion drives him to keep looking ahead:
“We want to do things well and create a high-quality restaurant. Who knows, maybe even earn a Michelin star one day.”
